Cooking with milk
Cold milk punch: Recipe for 2:5 cups milk,6 strips of orange,5 tablespoons brandy,4 tablespoons sugar,2 tablespoons honey (optional). Cracked ice
This milk punch can ideally be made in a cocktail shaker or glass jar with a tight fitting lid. Soak the lemon rind or orange in the brandy or scotch for two hours. Pour into the shaker, add milk and sugar, including the honey. Add little cracked ice, shake thoroughly and strain into glasses. Serve with finger foods.
Buttlermilk Biscuit: Recipe for 4 servings:2 cup flour,1 teaspoon salt (to taste),1 teaspoon baking powder,2 tablespoons sugar,1 cup butter or margarine,1 cup butter milk.
Set the oven at 450F and sift the flour, salt, baking powder, sugar and soda together. Cut in the butter, rubbing it in with your finger tips until the mixture resembles fine bread crumbs. Stir in the butter milk to make a soft dough. Be sure it is not sticky. Turn the dough onto a floured board and knead lightly until very smooth. Pat to one-third inch thickness and use a cookie cutter to cut into desired shapes and sizes. Place the biscuits on a baking sheet and bake until golden brown. Serve with milk shake.
Milk cake: Recipe:2 cups liquid milk,1/2 teaspoon salt,2 tablespoons vanilla extract,4 bananas (mashed),1 teaspoon baking powder,3 cups flour,6 large eggs (whisked),1 cup sugar,1/2 cup shortening.
Mix the whisked butter and shortening together in an electric mixer until creamy. Gradually, add the sugar and eggs. Mix thoroughly before combining the flour, baking powder and salt together. Add to the butter mixture alternatively with the milk (begin and end with the flour mixture). Stir in the mashed bananas and vanilla extract. Pour the butter into a greased and floured 10-inch pan. Bake at 330� for an hour. Insert a wooden pick into the center, if it comes out clean, then it is ready. Cool on a wire rack for 15 minutes. Remove from the pan and serve as milk cake.
Iced coffee shake: This drink is a favourite with children.
Recipe for one:1 1/2 teaspoons instant coffee,1 cup very cold milk,sugar to taste,A little whipped cream or coffee ice cream
Beat 1 1/2 teaspoons instant coffee into 1 cup very cold milk and add sugar to taste. Whisk in a little whipped cream and chill until needed.
Mocha shake: 1 1/2 squares unsweetened chocolate, cut into pieces.
1/4 cup boiling water,2 teaspoons instant coffee,1 1/2 cups cold milk,3 tablespoons sugar, vanilla, chocolate or coffee ice cream.
In a blender put the unsweetened chocolate and blend for 5 seconds at high speed. Add the boiling water and blend until smooth. Add instant coffee, cold milk and sugar as measured or to taste. Blend until very smooth, increasingly speed towards the end.
Chill thoroughly. Just before serving, pour into tall glasses and top with vanila chocolate or coffee ice cream.
Chocolate shake: Recipe for 2:1 1/2 squares unsweetened chocolate, cut into pieces. 2 cups scalded milk,1/4 cup sugar.
Put the chocolate squares in a blender. Blend for 5 seconds at high speed. Add 2 cups scalded milk with the sugar, or to taste. Blend until very smooth, increasing speed towards the end. Top with whipped cream; serve hot or cold.
Banana flip: 1 1/2 cups milk,1 large banana, cut into pieces,1 tablespoon honey,2 very thin strips orange rind,1 tablespoon rum (optional).
Pour milk in a blender, add banana, honey, orange rind and rum. Blend at high speed until very smooth. Chill thoroughly and serve in tall glasses,, garnished with a slice of orange and a spring of mint.
Egg hog: Recipe for one:1 egg separated,1 tablespoon sugar,2 tablespoons brandy or rum,3/4 cup milk,2 tablespoons heavy cream, stiffly whipped.
Pinch of grated nutmeg,
Beat egg yolk with the sugar until thick and light. Add brandy or rum and beat well. Gradually stir in milk. Whip the egg white until it holds a stiff peak. Beat the whipped cream into the eggnog and fold in egg white. Pour into a glass, sprinkle with grated nutmeg and serve cold.
Maids of honour: Recipe:1 cup quantity of rough puff pastry.
For filling,1 1/2 cups small curd creamed cottage cheese,1 egg, beaten to mix
2 tablespoons melted butter,1/4 cup sugar,Grated rind and juice of 1/2 lemon
You will need 12 to 18 tar flat pans (2 1/2 inch each) and 3 inch cookie, cutter
Make the pastry dough and chill for 30 minutes. To make the filling: work the cottage cheese through a sieve and beat in the egg, butter, sugar, lemon rind and juice. Set oven at 400� Farenheit.
Roll out the dough to 1/4 inch thickness, stamp out the rounds with the cutter and line the tarflat pans. Press the dough into the bottoms of the pans with your thumb and prick lightly with a fork. Fill with cottage cheese mixture and bake in heated oven for 25 to 30 minutes or until the pasting is puffed and brown.
Whipped cream biscuits: Recipe:2 cups flour,3 teaspoons baking powder,3/4 teaspoon salt,1 cup heavy cream, stiffly whipped,2 inch cookie cutter.
Set oven at hot (425�F).
Sift together flour, baking powder and salt and stir in the stiffly whipped cream. Turn out dough onto a floured board; knead lightly for 30 seconds or until only just smooth.
Put dough to one-third inch thickness, prick with a fork and cut into 2 inch circles, or into triangles. Put these on a baking sheet, bake in heated oven for 10 to 12 minutes or until golden brown, and serve as soon as possible.
